Siempre Tequila is not just any tequila I adore, but they consistently introduce novel variations that deepen my appreciation for the product!
Their latest addition, Supremo Blanco, represents a remarkable traditional endeavor from Siempre that will surely captivate enthusiasts of high proof spirits.
The process of crafting Supremo involves taking the exceptional agaves at Siempre, baking them inside classic brick furnaces utilizing locomotive-style steam for heating. Following thorough baking, they are crushed using a tahona. The resulting juice undergoes wild fermentation, meaning there is no additive of yeast – just pure natural processes at play.
Once fermentation is complete, the liquid is double distilled in alambique stills, with the hearts and a sizeable portion of the tail of the distillate being collected and bottled at its original strength.
I had the privilege of tasting a sample bottle sent by Siempre, and my impressions are detailed below.
Upon nosing, Supremo presents a vibrant agave aroma, hints of fruit, minerals, a touch of hay, all beautifully pure without any harsh alcohol notes that might be expected from a 110 proof Blanco.
On the palate: sweet agave, saline notes, a hint of jalapeño, with a lingering finish. Personally, I slightly lean towards the fruity aroma over the salty spiciness, but both aspects are truly remarkable.
I am eagerly anticipating Siempre’s next release, as each expression they have unveiled thus far has been consistently outstanding.
