Aspen residents are eagerly anticipating the debut of the new HaSalon dining experience at the W Aspen hotel. Set to open in mid-December 2024, the renowned Israeli chef Eyal Shani is bringing his innovative Mediterranean concept to Colorado. This immersive and multi-sensory dining adventure aims to elevate the experience with excitement and surprise.

Zaric, an acclaimed mixologist and creator of iconic Employees Only bars, will present a new bar concept named Hidalgo, featuring cocktails inspired by Aspen’s local ingredients. Patrons can look forward to a range of enticing handcrafted agave-based cocktails.
Located at the lobby level within the hotel’s stunning grotto, Hidalgo will become a permanent attraction at W Aspen. Guests might start their evening with the Pine For Aspen cocktail, crafted with Bombay Gin, Becherovka, lemon juice, pine needle leaf syrup, and a spritz of Fernet Branca, garnished with a rosemary sprig for an aromatic touch.
Among other exciting cocktails are the “Improved Margarita” and the “Yellow Jacket,” each offering contemporary spins on classic recipes made with fresh ingredients. This fresh cocktail venue will welcome guests Thursday through Monday from 6 p.m.
A standout item from the menu features ribbons of fennel combined with thinly sliced avocado, garnished with earthy dill and poppy seeds. A light dressing allows the delightful flavors of the fennel and other elements to shine.
Culinary highlights include charred beet carpaccio, presented as a stunning sheet reminiscent of stained glass. The ruby and yellow beets, thinly sliced and roasted, boast a tender texture that preserves their natural sweetness, complemented by a hint of smokiness balanced with crème fraîche and shaved horseradish.
Additional shareable delights feature baby potatoes topped with Osetra caviar, impeccably sliced bluefin tuna, and ribeye steak cooked to the diner’s specifications.
Signature pasta dishes include creamy green rigatoni and ricotta-filled pasta “clouds.” The chef’s spaghetti, adorned with Ossetra Caviar, glimmers in a delicate San Marzano tomato sauce.
Chef Eyal boasts over 46 esteemed restaurants across the globe, including Michelin-starred locations such as Shmoné, Port Sa’id, Miznon, and Malka. With establishments in New York City, Las Vegas, Miami Beach, Tel Aviv, and now Aspen, HaSalon emerges as a must-visit for culinary enthusiasts exploring these cities.
Another customer favorite is Bourekas, ready to be baked. This flaky pastry, filled with spinach, comté, ricotta, and parmesan cheese, is accented with herbs and a sprinkle of sesame seeds. Served steaming hot from the oven, it is accompanied by an Israeli salad and herb-infused crème fraîche.
To end the evening, guests can indulge in a generous slice of pistachio olive oil cake, paired with raspberries for a touch of sweetness. Other menu highlights include Basque cheesecake, refreshing sorbets, and a chef’s mystery selection.
