    “Experience the Magic of the Holidays with Festive Creations by Michelin-Starred Chef Carlos Gaytán at Downtown Disney”

    Michelin-starred Chef Carlos Gaytán has recently introduced two innovative concepts under the Patina Restaurant Group: PASEO and Céntrico. Both venues are located in the lively heart of Downtown Disney and draw inspiration from Mexico’s rich natural landscapes, cultural traditions, and contemporary gastronomy.

    Chef Gaytán is a celebrated ambassador of Mexican cuisine; he holds the distinction of being the first chef born in Mexico to earn a prestigious Michelin star. His culinary journey began in Chicago, where he progressed through various roles at the North Shore Hotel and Bistro Margot, working as chef de cuisine under the notable chef Dominique Tougne. Eventually, he launched his own restaurant, Mexique, where he skillfully combined his Mexican heritage with his passion for French cooking techniques.

    His talent and creativity in the kitchen have been featured in numerous food, travel, lifestyle, and television platforms worldwide, including a notable appearance on BRAVO’s “Top Chef” in 2013.

    “We are thrilled to showcase Chef Gaytán’s culinary artistry to our guests and to reveal his distinguished Mexican cuisine as we grow our presence in the Downtown Disney District,” said John Kolaski, President of Patina Restaurant Group, at the opening ceremony. “Each of these unique venues – Paseo, Céntrico, and Tiendita – offers a personalized dining experience with their distinctive atmospheres, all while staying true to their roots in authentic Mexican culinary and cultural traditions.”

    The chef and his team prepare a diverse menu that includes appetizers, small plates, seafood dishes, tacos, ceviche, and refreshing cocktails. Currently, both Paseo and Céntrico feature seasonal offerings inspired by Halloween and Día de los Muertos, enhancing the dining experience for guests in Downtown Disney.

    Paseo presents a Muertos Margarita, crafted with Don Julio Blanco, RIPE Margarita Mix, orange juice, and pineapple juice, and topped with a salted black sugar froth.

    Céntrico offers two festive beverages to celebrate the season: the Pumpkin Spice Horchata and the Casa de Sangre Margarita, a whimsically spooky cocktail served in a Tiki mug, created with Casamigos Blanco, black cherry syrup, Alma Finca liqueur, lime juice, and garnished with black cherry.

    For dessert inspired by Día de los Muertos, guests can enjoy the Halloween Buñuelo, a fried treat served with spiced chocolate sauce, cinnamon sugar, and seasonal corn.

    The restaurant also features a fall-themed Pumpkin Dulce, comprising spiced sponge cake drizzled with maple syrup ganache, complemented by earthy walnut crumble, rich pumpkin mousse, and savory gruyere, accompanied by a scoop of rosemary ice cream.

    Signature sweets also include visually stunning Cacao with crispy nibs, a delicate sweet elote that resembles corn on the cob, and a refreshing mango delight.

    A highlight dish from Chef Gaytán is the Yucatan Fish, prepared with the catch of the day and wrapped in a banana leaf. This tender and flavorful dish features an achiote and orange marinade, accompanied by sweet potato puree and creamy habanero sauce, topped with a tomato and avocado salad.

    Another popular main course option is the Pulpo Enamorado, which consists of grilled octopus served with tuna aioli, salsa macha, and pickled vegetables.

    Make sure to try the creamy Haas avocados blended with tomatoes, cilantro, onions, lime, and serrano chiles, garnished with a watermelon radish and served with crispy tortilla chips.

    In a recent interview, Gaytán shared, “My mother nurtured my passion for cooking, which motivated my move to America to refine my skills. Throughout my career, I have been blending traditional French cooking techniques with the cherished recipes and traditions from my childhood inspired by my family. It’s a true privilege to merge my love for my homeland, my family, and culinary art and share that with the guests of Paseo, Céntrico, and Tiendita. I am incredibly proud to launch these restaurants.”

    Paseo features a modern dining area overlooking the tortilla-making area on one side, while offering views of Downtown Disney on the other. Guests can also enjoy an outdoor balcony, allowing them to dine amid the vibrant atmosphere below.

    The dining and bar spaces are decorated with rich wood accents, custom leather decor, vibrant greenery, and specially designed native elements that celebrate Mexico’s heritage.

    Chef Gaytán’s elevated culinary experience highlights lesser-known Mexican delicacies and seasonal dishes artfully presented at the table. The inviting aromas and outstanding flavors are sure to entice repeat visits.

    Parking for Downtown Disney District is available at the Simba Lot, which can be accessed from Disneyland Drive, located between West Katella Avenue and Pixar Place Hotel. The cost for the first hour of parking is $10. Validations are offered after the first hour of payment. Guests can enjoy an additional three hours of same-day parking with a minimum purchase of $20 and validation from any Downtown Disney venue. Additionally, visitors can extend their parking by five extra hours of same-day parking with validation from any of Downtown Disney’s table-service restaurants, Paseo and Céntrico.
