Dorado Beach, a Ritz-Carlton Reserve, is a unique tropical resort that sets itself apart from others around the world. With its historic location, ocean-facing suites, and exceptional dining options, it offers an unparalleled experience. During my recent visit, I had the pleasure of indulging in the culinary adventure at POSI+IVO, where Chef de Cuisine Daniel Franco’s Izakaya experience left me in awe.

As you enter the restaurant through an entrance surrounded by lush palm trees and local flora, you are instantly transported to a different world. Walk along a boardwalk towards the ocean, and you’ll find yourself on a pool verandah with sweeping views of the crashing surf. One unique feature of POSI+IVO is its sand flooring, where you can enjoy delicious cocktails and meals while sinking your toes into the sand.

The Izakaya experience at POSI+IVO is limited to only six guests, creating an intimate and exclusive dining setting. During my visit, there were only two of us, which made it even more special. Tucked away from the main bar, the Omakase Bar is adorned with a stone countertop and gently swaying fans. Chef Franco greeted us with a warm smile and immediately commenced the Izakaya dinner.

The menu promises a feast of flavors influenced by the neighborhoods of Japan, taking you on a culinary journey through Japanese culture. And it certainly delivers on that promise. Each course showcases the freshest seasonal ingredients, with standout dishes like lobster gyozas, spicy bluefin tuna tartare, and the mouth-watering Buta Tsukune, a kuro buta ground pork skewer with shiso, garlic, onion, and a cured egg yolk.

Chef Franco’s skill and passion shine through in every course. His dedication to his craft is evident in his piercing blue eyes as he meticulously prepares each dish while engaging in conversation. The culinary artistry is not only evident in the flavors but also in the meticulous presentation on unique stoneware, ceramic dishes, and poised seashells.
